Old-Fashioned Corn Bread

My father-in-law insisted that chili should not go unaccompanied by corn bread and graciously cooked up these tasty corn bread squares for our Calvary film night. Izzy, I think, may have eaten half the pan. Then fell asleep on the couch with the baker. Image

Ralph’s Old Fashioned Corn Bread

Adapted from the back of the Hodgson’s Corn Meal bag

2 tbsp butter

2 tsp baking powder

1 tsp salt

1 egg

2 cups corn meal

1 tsp soda

2 tbsp honey

1 ¾ milk (buttermilk)

Melt butter in a cast iron skillet in a 400 degree oven. Mix ingredients into a thick batter and put the batter in a skillet to bake at 400 for 23-35 minutes or until brown. Image
