Dark Chocolate No Bake Cookies

Just returned from the yard where the chickens are gracing the grass with their morning constitution. Reminded me that I forgot to post these tasty little nuggets way back when I made them this spring. Not so photogenic, but good.

Dark Chocolate No-Bakes, or as my Grandmother Used to Say, “Cat Yummies”

Adapted from Penzeys Spices

2 Cups sugar

1/3 Cup dark chocolate cocoa powder, Dutch style

1/2 Cup milk

1 stick butter or margarine, room temperature

1 tsp. vanilla

21/2 Cups oatmeal, regular or quick-cook

Combine the sugar, cocoa and milk in a heavy medium saucepan over medium heat. Boil until the mixture forms a soft ball when a bit is dropped in cool water, stirring regularly. This will take 7-10 minutes. If you are using a candy thermometer, soft ball stage is 235-245°. Turn off the heat and add the butter/margarine, vanilla and oatmeal. Stir vigorously to combine. Drop by the spoonful onto waxed or parchment paper-lined cookie sheets and let cool. Do this part quickly, as once the mixture cools it hardens. It is best to have two lined baking sheets and your spoon ready to go while you are boiling the mixture.

  1. Oh my goodness I love the name of these, and am suspecting that you’ve inherited at least some of your marvelous sense of humor for the grandmother who came up with that name 🙂 They look like such a delicious take on the much more common peanut butter-chocolate-oatmeal no bake cookies!

    1. Cat yummies, haha. Well, they look exactly like chicken poop and so I suppose in our case over here we should be calling them Izzy yummies (so awful, Izzy thinks chicken poops are treats we have strategically hidden around the yard for her!)

      1. Aaahhh Izzy, what an icky habit! I’m glad her “treat” treasure hunt in the yard brings her joy, at least, and hope it doesn’t result in messes for you and KP to clean up!
